Garden Fresh Cocktail
A refreshing tomato juice for a healthy, on-the-go beverage or post-workout recovery.
Ingredients
- 1 cup (180 g) tomatoes, diced
- ½ cup (15 g) fresh spinach
- ¼ cup (30 g) carrots, halved
- 1 Tablespoon medium onion, peeled, diced
- 1 sprig parsley
- ¼ cup (35 g) red bell pepper, stemmed, seeded, diced
- ½ teaspoon Worcestershire sauce
- ⅛ teaspoon hot sauce
- 1 dash salt
- 1 cup (130 g) ice cubes
Directions
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase to the highest speed.
- Blend for 1 minute using the tamper to press the ingredients into the blades, or until desired consistency is reached.

Delicious!
Wonderful flavor! I doubled the recipe for my husband and myself and added a little extra onion and parsley. I also used a dash of kosher salt, celery salt and a couple sprinkles of cayenne pepper. I'm an avid juicer, so I'm still trying to get used to the blended texture. Other than that, I love this recipe. Will definitely make again.

If you are going for V8 this a great start....
Like the other reviewers, I think a little spice would make this taste a more like V8. My juice also turned out green even though I followed the recipe (next time I will use more tomatoes or less spinach because I want my V8 to be redish). Also if you blend according to the instructions you do get a good texture - take your time increasing the speed to 10.

Better than the store-bought vegetable juice!
Great juice, and easily customizable. I added celery, cucumber, a bit of cayenne pepper, a spring of parsley and also cilantro. And because I was out of spinach, I used kale. I'm not sure if this is closer to a gazpacho or a juice, but it was very very tasty! And a great way to use up the little bits of leftover vegetable I had.

I added a garlic clove, some cayenne and juice from one lemon, and some water to thin it out and this was perfect. Green color but I didn’t mind. Great base recipe.

First time trying this recipe, very pleased with.
Purchased a Vitamix last year. During the summer experimented with mostly fruit smoothies. This year we have been enjoying more use of the Vitamix as we have made several soups , smoothies and this recipe. The flavour was awesome and knowing the ingredients were all fresh just hadn't to the versatility of the Vitamix machine. Looking forward to making more healthy, delicious recipes. Well done Vitamix, great product. Plus, love the cleaning feature!

Delicious! Great afternoon pick-me-up!
I add a splash of ACV or lime juice, a couple of dried stevia leaves, a grind of pepper, and about 3/4 cup of water and a few ice cubes. Very customizable to suit taste. The extra water helps reduce some of the texture for a more liquid drink.
