Parmesan Balsamic Vinaigrette

A tart and tangy dressing or chicken marinade with pleasant cheese overtones.

Parmesan Balsamic Vinaigrette


  • ¼ cup (60 ml) balsamic vinegar
  • 1 lemon, peeled
  • 2 cloves garlic, peeled
  • 2 teaspoons salt, optional
  • 6 Tablespoons (20 g) fresh basil leaves
  • ½ cup (40 g) soy parmesan, or parmesan cheese
  • ½ teaspoon ground black pepper
  • 1 cup (240 ml) extra virgin olive oil


  1. Place all the ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed.
  3. Blend for 30 seconds, or until emulsified.
