Tomatillo Salsa
Made with tomatillos, scallions, and jalapeño, this authentic, Mexican salsa verde has fabulous flavor. Use it to top enchiladas, or serve it with tortilla chips.
Ingredients
- 16 (550 g) fresh peeled tomatillo, or stewed
- 4 (20 g) scallions, roots trimmed
- ½ jalapeño, seeded
- 2 garlic cloves, peeled
- ½ lime, peeled
- 1 cup (20 g) fresh cilantro leaves
- 1 teaspoon salt, optional
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 30 seconds, using the tamper to press ingredients toward the blades.
- For a chunkier style salsa, pulse the ingredients on Variable 7.
Notes
For a spicier dip, use a whole jalapeno and keep the seeds in. This salsa can be used as a standalone dip, or as an accompaniment to vegetables or meats. Try charring the tomatillos on the grill or under a broiler for additional flavor.

Delicious but not chunky
If you're looking for a tangy salsa verde sauce that would go great on rice, fish, etc., then this is it. It also is a great additional sauce to add on top of nachos. It's not, however, a chunky salsa like in the picture shown. Fifteen seconds is too long in the Vitamix for a chunky result (or perhaps I stewed the tomatillos too long?). I do happen to like resulting smooth sauce, however, so I'm quite pleased.

Perfect
This recipe worked great for me, although I didn't have any scallions so I used a cippolini onion instead. I deliberately blended mine long enough to have a more liquidy salsa like we usually get from the taqueria; we use it for sauce on our tacos, tamales, etc. Thanks!

Great fun!
I bought a Vitamix two weeks ago and this was the first thing I made. I used poblanos and a few pickled jalapeños. It was great and blended together so well. Not to say the enchiladas were good too!

Flavor improves by roasting tomatillos & onions
It seemed to be missing something on my first attempt. Second time I grilled the tomatillos, jalapeño and onions. The char from roasting/grilling bumped up the tasted quotient significantly. Pulsing provided a chunky salsa. Now that Hatch chilis are in season, I’ll make it again adding roasted Hatches.

Tomatillo Salsa
So very simple to make and so very tasty. I am not a fan of "hot" food. This has just enough tang for me. Will be sharing this with my son and his wife.

Confusing Recipe!
When I read the recipe, I wasn't clear on whether or not you used fresh tomatillos or, if those weren't available, the canned. I sent a message to Vitamix but never got a response so I just tried it the way I thought it should be. I used fresh tomatillos. I peeled the husk off but not the skin. I used a whole jalapeño and a whole lime. I also think more salt is needed. I put everything in the blender and blended until it was the consistency I wanted. It was still very liquid but will make a great sauce for tacos. After it sits in the container for a few minutes, it looks like the liquid goes to the bottom. I'm sure you could strain it a bit if you like it more chunky. It looks nothing like the photo but I thought it was very good.
