Dan Dan Noodle Salad
This Dan Dan noodle salad combines ramen, bok choy, corn, and toasted sesame seeds with a creamy chili crisp–tahini dressing. The blended sauce delivers savory heat and nuttiness, while the chilled noodles and vegetables create a balanced, make-ahead main or side dish.
Ingredients
- For the Dressing
- 1 Tablespoon Chili Crisp
- 2 Tablespoons (30 ml) soy sauce
- 2 Tablespoons (30 ml) rice wine vinegar
- 1 garlic clove
- ¼ cup (60 ml) tahini
- ⅓ cup (80 ml) soy milk
- For the Salad
- 1 head (2 kg) bok choy, chopped
- 4 packages ramen noodles
- 12 ounces (360 g) corn kernels
- 4 Tablespoons (40 g) sesame seeds
Directions
- Place all ingredients for the dressing into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 42 seconds.
- In a large pot bring 8 cups of water to a boil. Carefully put the ramen in and cook till almost finished about 7 minutes. Add the corn and bok choy and cook for 1 minute. Strain and rinse under cold water and place in a large bowl. Add the dressing and serve with sesame seed sprinkled on top.
Notes
For added protein, include shredded chicken, tofu, or edamame. Adjust the chili crisp to control heat, or add a touch of honey for subtle sweetness. Tahini and sesame seeds contribute healthy fats, while bok choy adds fiber and fresh crunch.
