Fava Bean Hummus
This fava bean hummus is a smooth, herb-forward dip made with cooked fava beans, tahini, lemon juice, olive oil, and fresh dill. Creamy and bright, it offers a fresh alternative to traditional chickpea hummus for spreads, snacks, or appetizers.
Ingredients
- 2 cups (275 g) fava beans, de-shelled and peeled
- ¼ cup (60 ml) tahini
- 3 Tablespoons (45 ml) extra virgin olive oil
- 3 Tablespoons (45 ml) fresh lemon juice
- 2 garlic cloves, peeled
- ¼ cup (10 g) fresh dill [or basil or tarragon]
- ¼ serrano pepper [or jalapeno], seeded, optional
- ½ teaspoon kosher salt, optional
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Run the Dips & Spreads Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 60 seconds, using the tamper to push ingredients toward the blades.
- Taste and adjust seasoning with salt and fresh lemon juice. Serve hummus in a bowl with a drizzle of extra virgin olive oil and a sprinkle of fresh dill leaves.
Notes
If you do not have fresh dill, try any of these delicate herbs: basil, mint, parsley, chives, tarragon, or a combination! If you can't find fresh fava beans, using frozen works well, just make sure they are peeled or peel them yourself by blanching & shocking them.
