Fava Bean Toast

Celebrate Spring with this fresh & earthy toast. Enjoy with a nice Chianti.

Ingredients

Directions

  1. Fit the Food Processor with the Multi-Use Blade.
  2. Place 2 cups of the fava beans, extra virgin olive oil, water, garlic, thyme leaves, lemon juice, salt (if using), and black pepper into the Vitamix container and secure the lid.
  3. Pulse the mixture 4–8 times until evenly chopped or desired consistency is reached.
  4. Spread the processed fava mixture onto the toasted slices of bread and top each with the reserved whole fava beans & shaved cheese. Sprinkle with lemon zest. Garnish with red pepper flakes and mint leaves, if desired.
  5. Nutrition Note: Who would think that a piece of toast with a spread could contain 10 grams of plant protein? Fava beans are rich in protein, fiber, vitamins like folate and vitamin K, and minerals such as iron and magnesium. When spread on whole-grain, rustic bread, you also get the benefits of complex carbohydrates and additional fiber, promoting sustained energy and digestive health. This combination makes for a balanced, heart-healthy, satisfying dish.

Notes

To prepare fresh fava beans: 1. To shell the beans, break open each pod by tearing off the end and pulling the string-like seam down. Slide your finger along the seam to open the pod, or twist the pod & use your thumb to open it. 2. Bring a pot of salted water to boil. Drop the shelled beans into the water and cook for 1 minute to blanch them. Drain the beans & shock them in a bowl of ice water until cool. 3. Peel the thick skin that surrounds each bean by squeezing it, using your thumbnail to break open the skin & push the bean out.
