Parmesan Balsamic Vinaigrette

A tart and tangy dressing or chicken marinade with pleasant cheese overtones.

Ingredients

• 2 Tablespoons (30 ml) balsamic vinegar
• ½ lemon, peeled
• 1 garlic clove, peeled
• 1 teaspoon salt, optional
• 3 Tablespoons (10 g) fresh basil leaves
• ¼ cup (20 g) soy parmesan [or parmesan cheese]
• ¼ teaspoon ground black pepper
• ½ cup (120 ml) extra virgin olive oil

Directions

1. Place all ingredients into the Vitamix container in the order listed and secure the blade base.
2. Run the Emulsify Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 20 seconds.
