Crema de calabaza bellota
Tradicional receta otoñal con todo el sabor navideño del jarabe de maple, la nuez moscada y la canela en polvo. Decore con semillas de calabaza tostadas para darle un toque aún más festivo.
Ingredientes
- 2 tazas (480 ml) de caldo de verduras o de pollo
- ¼ de taza (60 ml) de leche de soya
- 1 calabaza bellota (454 g) pelada, sin semillas, asada y enfriada
- 2 dátiles (20 g) sin hueso o 1 cucharadita de jarabe de maple
- 1 pizca de nuez moscada molida
- Una raja de canela de ½ pulgada o 1/4 de cucharadita de canela molida
- ¼ de cucharadita de sal (opcional)
Instrucciones
- Vierta todos los ingredientes en el vaso de la Vitamix en el orden indicado y cierre bien la tapa.
- Encienda la licuadora en la velocidad más baja y luego increméntala hasta llegar a la máxima.
- Licúe durante 5 minutos y 45 segundos o hasta que salga mucho vapor a través del orificio del tapón de la tapa.
Notas
Para asar la calabaza fácilmente, pártala a la mitad, saque las semillas si lo desea y coloque hacia abajo la parte con la pulpa sobre una bandeja para hornear ligeramente engrasada. Perfore la pulpa con un cuchillo en varios puntos y ase a 350 °F (180 °C) durante 30 minutos.

Vitamix Squash Soup Medley Becomes Pumpkin Soup
Because I combined two Vitamix recipes I didn't want to rate this particular Acorn Squash Soup highly. I don't care for sweet soup but wanted to use freshly baked pumpkin to make an easy soup. I used the 2 cups chicken broth, canned milk, and 1 cup mashed pumpkin in place of the acorn squash from this recipe. But I took the seasonings from the Pumpkin Soup recipe on this website: onions, garlic, brown sugar, paprika, and nutmeg in the same amounts called for in that recipe. It was very simple and we enjoyed it. I will make this combined recipe again. If a person prefers a more distinct pumpkin flavor more pumpkin could certainly be added.

This soup was easy and so delicious
I had everything on hand to make this soup today, and I am so glad that I did! I did substitute the milk for original unsweetened almond milk, otherwise the ingredients stayed the same. I would love to try this with a vegetable or mushroom broth to keep it vegetarian. I found that the acorn squash was naturally sweet, so I would not add any more maple syrup than what was called for.

Amazing soup
I tried a neighbors Vitamix just to try out before I bought it. This soup was good the first time around but yet a little to thin. I added a whole acorn squash instead of half and added pumpkin spice instead of just cinnamon. Turned out awesome!

Super easy and very good!
I pressure cooked the acorn squash, peeled it and followed the Vita Mix recipe. Wow, this is outstanding! It has become a cold weather favorite in my home!

Surprising flavor
Tried the acorn soup as one of the many soup recipes that came with my Vitamix. Surprised at how flavorful it was, and feel the flavors intensified the next day. It’s on my menu for Thanksgiving.

Love It
I have been looking for a sweet squash soup receipt, this fits the bill, however it was very thin because you do not specify how much squash should be used. It just says 1/2 other acorn etc, etc. I would like to know how many cups to make it thick. I buy pre-cut squash from the store.

Tasty
I substituted vegan "chicken " bouillon and soy milk with an unidentified squash (cross-pollinated) from my garden. I was tempted to leave out maple syrup as I didn't want a sweet soup. It was perfect! Great for a quick lunch. I have pounds of the squash precooked in my freezer.
