Sopa de zanahoria al curry
Sofría zanahoria y cebolla para realzar el sabor de esta deliciosa receta.
- 6 (365 g) zanahorias partidas a la mitad
- ½ taza (80 g) de cebolla pelada y cortada en cuadritos
- ½ taza (120 ml) de leche de soya
- 1 cucharadita de curry en polvo
- ⅛ de limón amarillo pelado
- Sal y pimienta al gusto
- 2 tazas (480 ml) de caldo de verduras
- Vierta todos los ingredientes en el vaso de la Vitamix en el orden indicado y cierre bien la tapa.
- Seleccione la velocidad 1.
- Encienda la licuadora e incremente poco a poco la velocidad hasta 10 y luego, hasta nivel Alto.
- Licúe durante 6 minutos o hasta que salga vapor a través del orificio de la tapa. Sirva de inmediato.
Puede variar esta receta con leche descremada al 2% o leche baja en grasa en lugar de leche de soya.

Rated 5 out of 5 by ehatch1 from Tasty Soup This was my first Vitamix soup. I used the recipe as a base and made some changes, although I am quite sure the soup would have been fine as written. I just wanted a slightly different flavor. I used canned coconut milk instead of soy. I also added 1/4 cup of red bell pepper and a clove of garlic. I sautéed the veggies before blending, as I have an allergy to raw vegetables and needed them cooked. Finally, I used a tsp of Thai red curry paste instead of curry powder. This soup was done in 6 minutes and had the most velvet-like texture. It was simple to make and did not take much longer than it would have to heat up a can of soup, while being much healthier! This soup's a keeper.

I just made a half recipe to try it out and make a few substitutions based on prior reviews as well as ingredients I didn't have at my immediate disposal. First off, I did cook the carrots and I sautéed the onion after reading what the other reviewers had written. I didn't have any lemons but did have lemon juice so I used a shot of juice instead of lemon peel. I also used 1% milk instead of soy milk, ground ginger as well as a dash or two of turmeric in place of the curry powder. In the end, I added a tablespoon of ground flaxseed for the Omega 3's.

Rated 4 out of 5 by AvaB from this is so easy to make This is the first soup I've made with my Vitamix. The only alteration I made was to replace the 1/2 cup of soy milk with water. It was delicious. I have an A2500 and I used the Soup pre-set, which takes 6 minutes. I found that so convenient because I did the tidying up of the prep stuff during that time. Being my first soup I didn't know what temperature it would be when it was done - lukewarm, maybe? But no: it was properly hot. There was real steam rising from it when I dished it up. I am excited about trying other soup recipes - especially since this one was so quick and easy, and delicious.

Rated 5 out of 5 by Lubi from Excellent vitamix raw soup Delicious soup. Everybody likes it - my husband, family, friends. The only modification that I do is that I fry onion with a little bit of oil before blending all the ingredients together. This makes a huge difference in taste and smell and the soup doesn't feel "oniony". Decorate the soup with small amount of sweet red pepper powder and a leaf of basil when serving.

Rated 4 out of 5 by ggloff from Nice soup! This is my first soup recipe with my new Vitamix! I loved it. I used extra curry based on the last commit but I don't think I needed it. I used carrots from my garden that were very sweet. I will make this again. Super easy!

Rated 5 out of 5 by Frenchjd from First soup First time making a soup in the Vitamix. Decided to add a tiny bit of ground ginger and 5 small cherry tomatoes. Tasted great , a teeny bit of bitterness but I think it was my carrots not the recipe. Great full flavor, considering for next try adding either more carrots or a small cooked potato for more thickness. Also used chicken broth in place of vegetable broth.
