Sopa espesa de camote
Complemente esta sustanciosa receta con una deliciosa combinación de manzana, zanahoria y cebolla.
- ¼ de cebolla pelada y partida en cuadritos
- Aceite de oliva
- 1 camote horneado y pelado
- ½ manzana sin semillas ni corazón
- 1 zanahoria partida a la mitad
- 1 cubo de consomé de verduras
- 1½ tazas (360 ml) de agua
- En una cacerola, sofría la cebolla en aceite de oliva durante 5 minutos o hasta que esté blanda.
- Vierta todos los ingredientes en el vaso de la Vitamix en el orden indicado y cierre bien la tapa.
- Seleccione la velocidad 1.
- Encienda la licuadora y aumente poco a poco la velocidad hasta llegar a la máxima.
- Licúe durante 5-6 minutos o hasta que salga vapor a través del orificio de la tapa.Sirva de inmediato.

Instead of baking the sweet potato I just cut it into small pieces and fried it with the onion to speed up the process. I also added a big clove of garlic to the frying process at the end. I also added some ginger, turmeric, curry, and a touch of cinnamon to give this soup some kick! I think this is a great base recipe that you may want to add some spice to.

Rated 5 out of 5 by Devil from Sweet Potato soup in about 10 minutes. I just bought my Vitamix 6500 this afternoon. Brought it home. Now what? So, I looked online, found this soup recipe and made it in about 10 minutes. And it was GOOD. I did not use apple, but I did throw in a big handful of kale. Hilariously easy and quite palatable.

Rated 4 out of 5 by NicoleT from A Great Base Recipe My Vitamix arrived yesterday so I was anxious to try a simple recipe to get acquainted with the blender. The soup heated nicely at 6 minutes. Flavor was a bit bland and "carroty" for me as written. (I'm sure results and personal tastes will vary across the board). I added more sweet potato and onion. At the end - garnished with salt, pepper, pumpkin seeds and a teeny dash of cinnamon. I will make again and give two thumbs up!

But I wanted a light lunch and I had all the ingredients, so I thought, let's try it. Wow! This was yummy! The soup came out so smooth and creamy, if I hadn't made it, I'd never have believed there was no cream in it.

It didn't require much prep time but the food tasted like it would've required an extensive amount of time in the kitchen. I followed the directions exactly with my Vitamix 5300 and it was amazing! I will definitely use this recipe in the future.

I love this soup super easy to make healthy and yummy to eat the Apple really alters the taste I like slightly less than half of a small apple. I also add a clove or two of garlic and sauté the garlic with the onions. I love this soup!

Rated 4 out of 5 by Mrs G from Yummmmy! This recipe is super simple and delicious. I tripled the recipe because I had 3 sweet potatoes to use up. I also used only two carrots and no apple. To start the soup, as I do all soup, I used 1 whole yellow onion and 2 sticks of celery both diced and some fresh thyme. I sweated the vegetables and added 4 cloves of garlic at the end. Then I added 3 diced sweet potatoes. After cooking the veggies for about 10 minutes, I added some chicken stock. Simmered until veggies were fork tender. Added to blender and pureed away. It was pretty thick so I added a little more broth. Served hot with a dollup of sour cream. It was so good, plan to eat this for lunch this week and will make it again. Loving my new blender!
