Sopa espesa de camote
Complemente esta sustanciosa receta con una deliciosa combinación de manzana, zanahoria y cebolla.
Ingredientes
- ¼ (45 g) de cebolla pequeña pelada
- 2 camotes (540 g) cocidos
- 1 manzana mediana (200 g) partida a la mitad y sin semillas
- 1 zanahoria mediana (70 g)
- 3 tazas (720 ml) de caldo de verduras
Instrucciones
- Vierta todos los ingredientes en el vaso de la Vitamix en el orden indicado y cierre bien la tapa.
- Encienda la licuadora en la velocidad más baja y luego increméntala hasta llegar a la máxima.
- Licúe durante 6 minutos o hasta que salga vapor a través del orificio de la tapa. Sirva de inmediato.
Notas
El sabor de la cebolla cruda puede resultar demasiado fuerte; si desea realzar el sabor, sofría la cebolla antes de licuar.

I have owned my Vitamix 7500 for 2 years and would be lost without it (cashew cream, oh my). After reading several other posts, I decided to roast my sweet potatoes with carrots, onion and apples at 425 until softened. They were seasoned with a very small amount of spray oil, salt, pepper and garlic powder. When cooled, I added enough to fill 1/2 of my 64oz container along with about 1 3/4 cup veggie broth and veggie bouillon cube. I also added a big dash of cinnamon and 2 sprinkles of turmeric. I will probably make it again this week, it is so good. Sorry for no exact amounts! Thats how I cook. I am WFPB and now what I like! Give it a try!

This recipe is super simple and delicious. I tripled the recipe because I had 3 sweet potatoes to use up. I also used only two carrots and no apple. To start the soup, as I do all soup, I used 1 whole yellow onion and 2 sticks of celery both diced and some fresh thyme. I sweated the vegetables and added 4 cloves of garlic at the end. Then I added 3 diced sweet potatoes. After cooking the veggies for about 10 minutes, I added some chicken stock. Simmered until veggies were fork tender. Added to blender and pureed away. It was pretty thick so I added a little more broth. Served hot with a dollup of sour cream. It was so good, plan to eat this for lunch this week and will make it again. Loving my new blender!

Easy base - but even better with added spice!
I made this soup last night and it was super easy!
Instead of baking the sweet potato I just cut it into small pieces and fried it with the onion to speed up the process. I also added a big clove of garlic to the frying process at the end.
I also added some ginger, turmeric, curry, and a touch of cinnamon to give this soup some kick! I think this is a great base recipe that you may want to add some spice to.

A Great Base Recipe
My Vitamix arrived yesterday so I was anxious to try a simple recipe to get acquainted with the blender. The soup heated nicely at 6 minutes. Flavor was a bit bland and "carroty" for me as written. (I'm sure results and personal tastes will vary across the board). I added more sweet potato and onion. At the end - garnished with salt, pepper, pumpkin seeds and a teeny dash of cinnamon. I will make again and give two thumbs up!

Sweet Potato soup in about 10 minutes.
I just bought my Vitamix 6500 this afternoon. Brought it home. Now what? So, I looked online, found this soup recipe and made it in about 10 minutes. And it was GOOD.
I did not use apple, but I did throw in a big handful of kale.
Hilariously easy and quite palatable.

Tasty soup, but STAINS BOWL
My husband bought me the 5300 series for Mother's Day (2 days ago). Day 1 I made a smoothie which was good. Yesterday I thought I'd try a soup -- literally the 2nd thing I have made with my new machine. I followed this recipe, but added some ginger, turmeric, and curry as several reviewers recommended, just because I enjoy that flavor profile. The soup was good, but I was disappointed to find that my brand-new blender bowl is stained yellow-orange. I washed it right away (half a pitcher of water, with a drop of soap), and have since applied a mixture of baking soda and vinegar mentioned on the site elsewhere. The stain hasn't budged. I'm so disappointed, and I've only had my Vitamix for 2 days.
