Chutney Rice Salad

Mango chutney and fresh ginger marry into a flavourful dressing to drizzle over this sweet and crunchy rice salad.



  • 600 g (3 cups) brown rice, cooked
  • 125 g (1 cup) apple, seeded, cored, quartered
  • 55 g (½ cup) celery, diced
  • 40 g (¼ cup) sultanas
  • 2 spring onions, cut into pieces


  1. To make the salad, place all salad ingredients into a large serving bowl.
  2. Pour dressing onto salad ingredients and stir gently to coat well.



  • 155 g (½ cup) mango chutney
  • 60 ml (¼ cup) olive oil
  • 2 Tablespoons flaked almonds, lightly toasted
  • 1 Tablespoon lemon juice
  • 1½ teaspoon fresh ginger root


  1. Place all the Dressing ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 30 seconds until ingredients are well mixed.
