A hearty spread made with raw, roasted, or salted almonds that also works as a fruit dip.
- 4 cups (550 g) unsalted roasted almonds
- ¼ cup (60 ml) canola oil
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Use the tamper to press the ingredients into the blades.
- In 1 minute you will hear a high-pitched chugging sound. Once the butter begins to flow freely through the blades, the motor sound will change and become low and laboring. Stop machine.
- Store in an airtight container. It can also be frozen for longer storage.

I was reading an article on "How to choose the best almond butter" and at the bottom of that same article was a section on Homemade Almond Butter which had a link and led me to here. I decided to give it a try and was pleasantly surprised how easy it was to make and how delicious it tastes. I opted to make only half a batch in case it didn't turn out right. Therefore, I only used 2 cups of roasted almonds (I roasted myself). Initially I did not add any oil like some of the reviewers suggested. But it turned out a little dry. So, I decided to add 1 Tbsp of coconut oil instead of the 1/4 cup (or 1/8 cup since I was making half a batch) canola oil the above recipe calls for. It turned out creamy and delicious. Definitely will make again.

Another step I took from another site was, rather than scrape every bit I could, I left what didn't come out easily with a rubber spatula, added water, and made a quart of almond milk.

Rated 3 out of 5 by Rosa from Too many ingredients I make almond butter every week and you do not need the extra calories of canola oil. The VitaMix will make the most delicious almond butter with no oil whatsoever -- the nuts have enough oil on their own.

Rated 1 out of 5 by LI Gal from Making Almond Butter broke my machine! I made this recipe using my Vitamix and not only did it not come out smooth, the blade separated from the retainer nut. Luckily the folks at Vitamix were wonderful and replaced my container but I don't think I'll try it again. The customer service rep said I should soak the nuts for 4 hours before processing if I want to try it again.

I used my Vitamix I bought at the Boston Flower Shoe in about 1970, and it works perfectly despite using it almost every day!
