With this homemade applesauce, you control the texture without boiling the nutrients out of the apples. So simple--and so delicious!
- 4 apples, seeded, cored, quartered
- 2 Tablespoons lemon juice
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 3 for chunky or Variable 5 for a puréed consistency.
- Blend for 10-20 seconds or until apples are chunky or puréed, using the tamper to press the apples into the blades.

Can I substitute lime juice for lemon juice
The lemon juice is just to help preserve the color of the apple sauce. You can use lime juice in its place.

Most apple sauces use cooked apples to make the apples soft. You don't have to cook the apples for this applesauce recipe? Seems odd.
This is a raw applesauce recipe. You can certainly cook the apples if you prefer. You will get a different taste/texture with the cooked apples. Fuji, McIntosh or Golden Delicious are all great apples for making applesauce and are normally the most readily available.

How long is this good for in the fridge?
Holding things in a refrigerator is a great question all the time. The answers will vary. I always recommend using the product as fast as possible since the flavor, texture will be at it peak. In this particular recipe I would recommend no more than a week. You can look at the USDA website for more information on holding things in the refrigerator and other food related questions.
