Cinnamon Glaze

This vegan glaze, made with tofu and soy milk, is cinnamon sweetness on vegan sugar cookies.

Cinnamon Glaze

Ingredients

  • ¼ cups (50 g) silken tofu
  • 2 Tablespoons vegan butter spread
  • 2 teaspoons vanilla extract
  • 3 Tablespoons soy milk
  • 1½ teaspoons ground cinnamon
  • 2½ cups (240 g) powdered sugar

Directions

  1. Place tofu, butter spread, vanilla extract, soy milk and cinnamon into the Vitamix container and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 4.
  4. Blend for 15 seconds.
  5. Stop machine and remove the lid. Add powdered sugar and secure lid.
  6. Select Variable 1.
  7. Turn machine on and slowly increase speed to Variable 4. Blend for 30 seconds or until smooth, using the tamper as necessary.
