This sweet apple syrup is delicious served warm or cold over vanilla ice cream, pancakes or drizzled atop a slice of apple pie.
- ¼ cups (60 ml) water
- 3 cups (375 g) apple, seeded, cored, quartered
- ½ cups (100 g) granulated sugar
- 2 teaspoons lemon juice
- 1 teaspoon ground cinnamon
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 5-6 minutes or until heavy steam escapes from the vented lid. Use warm or cold over vanilla ice cream, pancakes or as a garnish for apple pie.

Turn machine on and slowly increase speed to Variable 10, then to High.??? Where is the "High" setting on my Blender? I see the "10" setting, don't see a "high" setting.
What machine do you have? If you look to the bottom of our recipes you will see "This recipe has been written for the C-Series machines with Variable Speed control and Standard 64-ounce container. If you are using a different Vitamix machine or container size, you may need to make adjustments to the Variable Speed, processing time, and/or ingredient quantities." Most of our older style machines have a 1-10 variable speed dial, then a switch to a high setting on the left. If you do not have this and you have a "pulse" switch instead, you have a newer style machine. That being said, your "ten" is the same as the "high" in our older machines.

Could you substitute honey or maple syrup in place of the white sugar?
Yes, you certainly can. You may want to add only about half of the amount to start with.
