Curried Carrot Soup
Sautée the carrots and onions to bring out a more intense flavor in this vibrant soup.
- 6 carrots, halved
- ½ cup (80 g) onion, peeled, diced
- ½ cup (120 ml) soy milk
- 1 teaspoon curry powder
- ⅛ lemon, peeled
- salt and pepper, to taste
- 2 cups (480 ml) vegetable broth
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 6 minutes or until steam escapes through lid. Serve immediately.
For recipe variation, use 2%, skim or low fat milk instead of soy milk.

The only modification that I do is that I fry onion with a little bit of oil before blending all the ingredients together. This makes a huge difference in taste and smell and the soup doesn't feel "oniony". Decorate the soup with small amount of sweet red pepper powder and a leaf of basil when serving.

I just made a half recipe to try it out and make a few substitutions based on prior reviews as well as ingredients I didn't have at my immediate disposal. First off, I did cook the carrots and I sautéed the onion after reading what the other reviewers had written. I didn't have any lemons but did have lemon juice so I used a shot of juice instead of lemon peel. I also used 1% milk instead of soy milk, ground ginger as well as a dash or two of turmeric in place of the curry powder. In the end, I added a tablespoon of ground flaxseed for the Omega 3's.

Tasted great , a teeny bit of bitterness but I think it was my carrots not the recipe. Great full flavor, considering for next try adding either more carrots or a small cooked potato for more thickness. Also used chicken broth in place of vegetable broth.

It was delicious. Topped with some chopped cilantro, a drizzle of kefir and coarse bacon flavored salt. Will definitely make again

want do you mean by 1/8 lemon peeled. Do you mean the whole lemon or the actually lemon peel?
You will need about one "lemon wedge", but remove the peel. You can also just use 1 tablespoon of lemon juice if you prefer.

So I followed this recipe minus the lemon and instead of soy milk use low fat (1% milk) .. But why is it foamy instead of a nice cream...tastes good though but kind of disappointed
The reason your soup was foamy rather than creamy is because when using 1% milk, you are removing some of the fat from the blending ingredients. If you are looking for a creamier soup you can use, whole milk, soy milk, heavy cream, half & half, etc. You will want to replace the soy milk with something around the same fat content, or higher if you want this soup to be creamy.

What adjustment do you have to make to this curry carrot soup recipe when using a Vitamix Turbo Blend 2 speed?
Using the two speed machine start the blend on the lowest setting and then turn to high. Blend for the 6 minutes or until your desired temperature.

Why does this recipe say "or until steam escapes'? I don't see where it says to heat anything.
The Vitamix heats by friction. So by blending for the time suggested the soup is being heated and will start to steam.

Why does raw vegetable soup become foamy by the time it is steaming
Do to the high speed of the blades some of the tricks you can do to reduce the foam is to add 1-2 tablespoons of flax seed to the soup and that should reduce the foam.
