Dukkah Spice Rub
This delicious middle Eastern spice blend pairs well with chicken, salmon and pork.
Ingredients
- 1 Tablespoon coriander seeds, toasted
- 1 teaspoon fennel seed, toasted
- 1 teaspoon fennugreek
- 1 Tablespoon sesame seeds
- 2 Tablespoons (20 g) pistachio nuts, toasted, shelled
- 2 Tablespoons (20 g) hazelnuts, toasted, peeled
- 1 teaspoon kosher salt, optional
- 1 teaspoon dried mint
- 1 teaspoon ground dried sumac
Directions
- Combine all ingredients into the Vitamix 8 ounce cup and secure the blade base.
- Start the blender on its lowest speed, then quickly increase to its highest speed.
- Blend for 10 to 15 seconds or until pulverized.
Chef's Notes
Do not over blend this recipe or it will become a nut butter.

- 2 Tablespoons (20 g) pistachio nuts, toasted, shelled
- 2 Tablespoons (20 g) hazelnuts, toasted, peeled
- 1 teaspoon kosher salt, optional
- 1 teaspoon dried mint
- 1 teaspoon ground dried sumac
Directions
- Place all ingredients into the Vitamix container and secure the lid.
- Select Variable 5. Start the blender and blend for 10-15 seconds or until coarsely chopped.
