With flecks of pumpkin pie spice, hints of brown sugar, and light cream cheese, this rich frozen treat is a perfect finale to any autumn meal.
- 2 Tablespoons milk
- 2 Tablespoons cream cheese
- ¼ pumpkin, baked, flesh removed
- ½ cup (110 g) light brown sugar, packed
- ½ teaspoon vanilla extract
- ½ teaspoon pumpkin pie spice
- 3 cups (390 g) ice cubes
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Use the tamper to press ingredients into the blades.
- In about 30-60 seconds, the sound of the motor will change and four mounds should form.
- Stop machine. Do not over mix or melting will occur. Serve immediately.

The recipe calls for 1/2 cup (240 ml) solid pack canned pumpkin. I will use canned pumpkin and a measuring cup that says 1/2 cup (118ml) but the recipe calls for 1/2 cup (240 ml). How much canned pumpkin should I use?

How far in advance can you make the ice cream, and how would you store it? Would it freeze into a solid block of ice?
If you are planning to make this in advance you should consider investing in the silicone ice cube trays. You can freeze this recipe into smaller cubes add about 1/2 - 1 C liquid of your choice, place the premixed cubes in the Vitamix and blend this to be served immediately.

We just purchased the gallery collection. I saw a pumpkin ice cream on HSN. Is this the recipe? If it is, what can I substitute for the cream cheese. I am allergic to dairy. I can use soy or coconut milk for the milk.
You can use the coconut milk or soy milk to substitute for the cream cheese and milk and the frozen dessert will work.

No I do not recommend to double this recipe. You will have to much ice in the machine so you will not be able to tamper effectively.
