Ginger Greens Juice
A delicate mix of cucumbers, celery, apples, and kale will give you a little extra pick-up that will keep you feeling refreshed and rejuvenated.
- ½ cups (120 ml) water
- 1 cucumber, quartered
- 1½ stalks celery, diced
- 2 apples, seeded, cored, quartered
- 2 cups (60 g) kale, chopped
- 1 inch (3 cm) fresh ginger root
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase to the highest speed.
- Blend for 30-45 seconds, using the tamper to press the ingredients into the blades.
- Strain through a filtration bag.
- Store in refrigerator. Use within 2 days.

I also don't strain it so it ends up more of a smoothie consistency, but I'm in love with this recipe! Other variations: swapping a banana for the second apple, and kiwi instead of celery.

This Green recipe I just had and It was great! I only sifted it because my milk bag has not arrived yet. I am ok though because all it means is I consumed more fiber which is what I need for healthy digestion. I am a happy camper.

So you really don't remove skin from cucumber and leave seeds in the apple?
Hi mike123, it does seem odd, but it is entirely reasonable to use WHOLE fruits and vegetables when the recipe says so. The only caution I would say is to be sure to thoroughly WASH everything unless you're certain the skins are clean of residue and chemicals. I'd add its good for you too, since you'll be digesting all the fibre and nutrients contained in the fruit. Don't worry, blend it longer and add some ice to keep it cool, and you won't notice any bits.

After blending the ingredients, do we have seperate the juice from the pulp using a filtration bag, or can we drink it the way it is?
Thanks Risa and Support, personally, I'd never want to filter out the fibre, this is extremely beneficial to your digestive system and feeling of fullness and eventual hunger. Keeping it in takes care of all these matters beautifully. As Risa mentions, it will likely be thick, so you have a few options, blend longer, and add ICE to prevent it from heating up. This will break down the fibres much more, the ice will keep it cold. You may want to add less water since you'll be adding ice. Ultimately, adding water to taste will also make the recipe go further. Avoid adding too much though!

Do you need to peel the cucumber & ginger?
You may want to peel the cucumber IF, when you taste it after scrubbing and rinsing, it tastes acrid or bitter. Its unfortunate if you do need or want to however, since the skins will hold most of the nutrients. Agree with the comment above about ginger, frankly, I've ALWAYS peeled ginger, the skin is VERY earthy and woody.

For those of us who are trying to do carb free, what option to any of these recipes can we do.
Cindy, these are healthy whole food drinks that contain natural carbohydrates. There are no complex carbohydrates or anything that has been processed. I do not know the reasoning behind your carb free diet but would recommend working with a dietitian so that you can manage your diet properly.

Any Kale will do. Curly kale has a bold flavor, Baby kale has a milder flavor. So pick one you enjoy and blend away.

What fruit can you substitute the apple with if you are allergic to them or to similar fruits?
Pears are a good substitute for apples.
