Ginger Turmeric Dressing

This light, refreshing dressing will become your favorite go-to for any salad with a delicious blend of lemon, ginger, garlic, and turmeric.

Ingredients

  • 4½ cup (1.1 l) extra virgin olive oil
  • 6 pieces (30 g) fresh turmeric, or 2 tbsp. ground turmeric, 1/4" slices
  • 1 cup (240 ml) red wine vinegar
  • ¾ cup (180 ml) fresh lemon juice
  • 1 piece (15 g) fresh ginger root, 1" slice
  • 1½ teaspoon salt, optional
  • 6 small garlic clove, peeled, sliced
  • 3 Tablespoons (45 ml) honey, optional

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed.
  3. Blend for 30 seconds or until desired consistency is reached.
