Gluten-Free Macaroons

A favorite dessert delicacy, this recipe is void of gluten, making it the perfect addition to a party spread.

Gluten-Free Macaroons

Ingredients

  • 1 cup (240 ml) fat free sweetened condensed milk
  • ½ ounces (15 ml) vanilla extract
  • 1½ teaspoons almond extract
  • 1 pound (455 g) sweetened flaked coconut

Directions

  1. Heat the oven to 350°F (180° C).
  2. Place the sweetened condensed milk and the extracts into the Vitamix container in the order listed and secure lid.
  3. Select Variable 1.
  4. Turn machine on and slowly increase speed to Variable 5.
  5. Blend for 15 seconds.
  6. Pour into a bowl with the coconut and stir together thoroughly.
  7. Using a 1 ½-inch (4 cm) scoop, scoop mixture about 2 inches (5 cm) apart onto a greased baking sheet.
  8. Bake for 10 minutes, rotate the tray, and bake an additional 5 minutes until golden brown.
