Pasta Sauce Recipe - Creamy Roasted Garlic Tomato Sauce


  • 6 large Roma tomatoes, quartered
  • 1 small onion, peeled, halved
  • 6 garlic cloves, peeled
  • 2 tablespoons (30 ml) olive oil
  • 2 tablespoons (8 g) chopped fresh parsley
  • 1 cup (240 ml) soy milk or low fat milk
  • salt and pepper


  1. Preheat oven to 350°F (180°C).
  2. Toss tomatoes, onion, and garlic in 2 Tablespoons(30 ml) olive oil and place in baking pan, cover with foil.
  3. Roast in oven for 1 hour. Cool 15 minutes.
  4. After roasting, place into the Vitamix container, add parsley, milk, salt, pepper, and secure lid.
  5. Select Low speed.
  6. Turn machine on and then switch to High speed.
  7. Blend for 3 minutes until smooth and thickened.

I have had my Vitamix for 25 years

My Vitamix still works as good today as it did 25 years ago when I bought it. I have the Steel Container. I have only had to replace the seal once. The new ones are nice. You can see your ingredients blending up your goodies. But my One size steel container will last forever.

Greatest Thing Since Sliced Bread

What a difference! It literally makes a smooth-smoothie. No bit/pieces of Kale stuck in my teeth nor straw like with the Ninja. I can make anything with Vitamix. I can now create what I want, how I want! Yeah!

I purchased a Vitamix in 1994. From day one I was pleased. I use it for everything. It performs as good today after 18 1/2 years. I wish the company would make a small container for smoothies for 1-2 people. It may seem pricey, but it should last someone a lifetime, unless it's abused.
