Beet, Apple and Ginger Smoothie
A smoothie consisting of beet, carrot, apple, ginger, and lemon juice, blended to perfection.
Ingredients
- 3 beet, washed, halved, steamed
- 3 carrots, halved
- 3 medium (450 g) apple, seeded, diced
- 3 piece (15 g) fresh ginger root, peeled
- 1½ lemons, peeled, halved
- 3 cups (390 g) ice cubes
Directions
- Place all ingredients into the Vitamix container and secure the lid. Select Variable 1. Start the blender and increase to its highest speed. Blend for 1 minute using the tamper to push ingredients into the blades.
Notes
This large batch smoothie is great to serve to the entire family.

Healthy, almost raw, vegan smoothie.
Seeing that I had all three main ingredients on hand I decided to try this recipe. I did alter it though. I added silken tofu for a thickener and for a protein component. I also added 2 handfuls of beet greens and 4 clementines. I probably added 1 1/2 the amount of ginger, too. I love ginger. Oh, and I didn't bother to steam the beets, just cut them into 1/4s and put them in. It's a beautiful red color. My smoothies are various shades of green, so it was a pleasant surprise. This smoothies is delicious. I'm glad I made a full blender worth.

I don't even like beets.
I have been looking for a way to consume beets since I am not a fan of the earthy dirt taste they give off. After seeing the reviews on this drink, I thought I would give it a try. All I can say is yum and yay!! I have found a way to enjoy beets.

Yummy! A Keeper
I followed the recipe, except I added just under a cup of plain yogurt because I like to add protein to every smoothie I make. Added a small amount of cold water too. Made plenty, about 2-12oz servings. Next time, I plan on making this with raw beets. Later in the year, I will probably try this with orange juice instead of lemon.
Very yummy! A good accompaniment with lunch or dinner.
I’ll be making this smoothie quite often. It helps that my friends have a surplus of beets! I get to help them out. Yum!

I love this smoothie
It's delicious. The second time I made it I added some briefly soaked chia seed for more nutrition, and didn't notice any difference. This one will be in my smoothie rotation.

One of my favourite smoothies!
This is one of my favourite smoothie recipes...it's so full of fresh anti-inflammaory fruits and vegetables, plus the colour is mesmerizing! Tastes really good, too.

too much unnecessary prep
No need to core the apple or peel the carrots or the beets. The great thing about the vitamix is it blends everything. Use cold water too, not just ice.

Great color
Hello. Well i don't know how this works with no liquid. I eventually added apple sauce to get it blended.. taste...ok. i know its healthy so ill go with that. Mind you i took one persons advice and did not steam the beet. Other than that i dont understand where the 5 star review comes from...healthy..yes
