Cashew Milk
Create fresher, more flavorful cashew milk at home. This recipe yields 4 1/2 cups of milk from just 1 cup of nuts.
Ingredients
- 3 cups (720 ml) water
- 1 cup (140 g) cashews
- 10 (70 g) dates, pitted
- ΒΌ teaspoon ground cinnamon
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 40 seconds.
Notes
For even more creaminess, soak cashews for at least 4 hours. You may strain the nut milk through a fine mesh strainer to remove the sediment, if you like. Store in an airtight container in the refrigerator for up to a week. Shake before serving. Our frozen dessert recipes will work perfectly by swapping this out for the liquid component.

Wow! Just, wow!
I received my Vitamix Pro750 (referb) today. I have been making cashew milk up till now by soaking the cashews, blending them (1c to 4 c water) in a small food processor in batches, and then straining the slurry. I actually bought myself the Vitamix to do the same job without needing to do it in batches.
I had NO IDEA what I was missing. Seriously. I just dumped 3 cups of water, 1 cup of raw (dry) cashews, a splash of vanilla, and a few dried figs (I cannot locate my dates!). Ramped the machine up to 10 and let it go for 1 minute. I didn't expect much other than only having one batch to strain. But, reviews here said that straining wasn't needed so I poured a bit into a glass for a taste test. WOW!! I simply cannot believe this wonderful, creamy, smooth, delish result!
I'm a convert. Vitamix FTW!

Easy and delicious
I buy the big container of cashews that are unroasted from costco; they are also organic. I also buy almonds. I do 1/2 cup of each and it yields 2 liters of the best nut milk ever. It's cheaper, fresher, and has no preservatives.

Easy and perfect for soups
I bought a used 3600, because I wanted the same model my parents had when I was much younger. Love the ease of making cashew milk for cream based soups. I can adjust the amount of water depending on the recipe, resulting in heavy cream or milk. I have even frozen and used later. Great for someone who cannot digest milk, but can have tree nuts.

Love it
I have a Vitamix as well. Just used this receipe and it was quick and easy. Dont have to put it through a cheese cloth which is great. Almond milk takes a little more work so I think this will be my quick go to for milk very often. Taste great and I added a pinch of salt a 2 dates.

Wow, really good
I've tried store bought almond milk, rice milk, etc., and have never really like them. This cashew milk was rich, creamy and much better than any store bought brand that I've tried. I still like actual milk more, but as a milk substitute, this is delcious.

Nut Coffee Creamer
We not longer buy the expensive creamers! Follow the directions above, substitute water with a Carrageenan Free milk + I add real vanilla + real almond extract + coconut sugar.... To die for!!! I have doing this for 3 months!!! Save money and higher quality...

Nicely scalable
It's really nice that this one is scalable, a single person might not want so much cashew milk at a time. Also, if you want it colder to start with, you can use a couple of ice cubes in place of some of the water.
For an extra bonus sort of thing, you can do a dairy free coffee drink by either using cold brew coffee or adding instant coffee to it.
