Chestnut Ice Cream
Roasted chestnuts evoke feelings of the holiday season, and this ice cream is a cool twist on traditional flavors.
Ingredients
- 1 cup (150 g) roasted chestnuts
- 1 ½ cups (240 g) low fat vanilla yogurt
- 10 dates, pitted
- 4 cups (520 g) ice cubes
Directions
- Place chestnuts, yogurt and dates into the Vitamix container in the order listed and secure the lid.
- Select Variable 1.
- Turn machine on slowly increase to the highest speed.
- Blend for 30 seconds creating a very smooth base. Stop machine.
- Add ice and secure the lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to the highest setting.
- Blend for 20 seconds using the tamper to push ingredient into the blades.
- Serve immediately
Notes
You can put all ingredients into the blender at one time just like our traditional recipes, but by blending the base first you are assured of a very smooth texture with no small pieces.

Sounds tasty
But this is not ice cream. Rather, this is frozen yogurt. The recipe name is misleading.

Delicious and so easy!
I had a packet of chestnuts left over from last christmas so decided to test this recipe out. I added a tablespoon of dark rum and it was delicious. Really quick and easy to make, I'll certainly be making this over christmas.
