Avocado Tahini Spread
The healthy fat of the avocado, mixed with the smokiness of the cumin and the bright flavors of the lemon and cilantro make this dipper a perfect for any party. Serve with veggie chips or pita bread!
Ingredients
- 3 avocados, pitted and peeled
- 1 cup (240 ml) water
- 6 Tablespoons (90 ml) fresh lemon juice
- 1⅓ cup (300 ml) Tahini
- 2 teaspoons ground cumin
- ½ cup (20 g) fresh cilantro leaves
- 2 teaspoons salt, optional
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Select Variable 1, or the Puree (Dips + Spreads) program.
- Start the machine, slowly increase to its highest speed, and blend for 45 seconds; or start the machine and allow the Puree (Dips + Spreads) program to complete. Use the tamper to press the ingredients toward the blades.

Nice!
I needed to use up some avocados, and this was great! I used lime juice and only 2 T of it, I’m not a fan of cilantro so just a few sprigs gave the right amount for me, also went with sesame seeds instead of tahini. The cumin is nice in this, but I cut that . I added water as I went, I think it depends on if you have tree ripened fruit or like me they are shipped and have been kept in storage, how much liquid is needed, this could get too runny very quickly. A narrow bottomed container reduces processing time, and very necessary if you go with sesame seed. It is easy to adjust the spices if you hold back anything you are uncertain you will like. I portioned mine for my lunches, pressed cling film onto the surface to keep it from turning brown.
