Heirloom Tomatoes and Pursalane with Sikil Pak and Chiapas Cheese
This light tomato salad is full of flavor, garnished with sikil pak, avocado purée, and Chiapas cheese.
Heirloom Tomatoes and Pursalane with Sikil Pak and Chiapas Cheese
Ingredients
- 4 heirloom tomatoes
- 6 tomatillos
- 1 Tablespoon fleur de sel, divided use
- lime juice, to taste
- granulated sugar, to taste
- ¼ cup (60 ml) olive oil, optional
- purslane
- ¼ cup (50 g) Chiapas cheese
- avocado purée, see recipe
- Sikil Pak, see recipe
- 3 radishes, thinly sliced
Directions
- Slice assorted tomatoes and season with salt, lime, sugar, and olive oil.
- Season purslane with salt and olive oil.
- Arrange all items on a serving platter. Garnish with Chiapas cheese, Avocado Puree, Sikil Pak, and radishes.
Sikil Pak
Ingredients
- 1 tomatillo, lightly charred
- ¼ onion, lightly charred
- 1 garlic clove
- ¾ cup (100 g) pumpkin seeds
- ½ cup (20 g) fresh cilantro leaves
- ¼ habañero chili, charred
- 2 Tablespoons vegetable oil
- 1 dash salt
- lime juice, to taste
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Select Variable 8.
- Turn the machine on and off to pulse 20 times.
Avocado Cilantro Purée
Ingredients
- 4 cups (200 g) cilantro, blanched
- ¼ cup (40 g) onion, chopped
- 2 garlic cloves, blanched
- 2 avocados, halved, pitted, peeled
- 1 Tablespoon lime juice
- 2 Tablespoons (30 ml) water
- 1 dash salt
Directions
- Place cilantro, white onion, and garlic into the Vitamix container in the order listed and secure the lid.
- Select Variable 1.
- Switch machine to start and slowly increase speed to Variable 10, then to High.
- Blend for 1 minute, or until desired consistency is reached.
- Add avocados, lime juice, water, and salt into the Vitamix container in the order listed and secure the lid.
- Select Variable 1.
- Switch machine to start and slowly increase speed to Variable 10, then to High.
- Blend for 60 seconds, or until desired consistency is reached.
