Hint of Mint Smoothie
What better way to start your day than with a healthy, raw smoothie that provides the many health benefits of fresh mint, as well as its refreshing flavor!
Ingredients
- 1 cup (240 ml) coconut water
- 1½ cup (240 g) green grapes
- 4½ cup (100 g) fresh spinach, loosely packed
- 6 fresh mint leaves
- 4 slices (400 g) pineapple, peeled
- 1½ cup (200 g) frozen mango chunks
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed and quickly increase to its highest speed. Blend for 45 seconds or until desired consistency is reached.

the coconut water is the key ingredient
Because so many smoothie recipes that I want to try call for white grapes - I bought several pounds, and froze them (washed, and de-stemmed). So this is my first green grape recipe that I didn't make a substitution. The only change I made was that I added 10 mint leaves - because I'm loving mint in smoothies.
It was the coconut water that really made this smoothie the success that it was. I was skeptical about 'wasting' coconut water on a smoothie because I thought it would be lost among all the other flavors. I was surprised to discover that it was the coconut water that joined them all together.
By the way: I made another one the next day - and only used the suggested 6 mint leaves, and it tasted better than my mintier 10-leaf version.

Way too much sugar. I know it’s “natural sugar” from fruit. Too sweet for me. Next time I’ll eliminate pineapple and mango.

Easy favorite.
An alternative to the coconut water is a tub of 80 calorie coconut yogurt. The flavor is great with these ingredients, and can carry the day even if you are out of mint. Love the idea of freezing a large quantity of green grapes. I also freeze a large box of baby spinach.

Too Much Sugar
I love my vitamin and all it can do. This recipe has way too much sugar in it, even if it’s natural. I would use either the guava or the pineapple, not both.
