Pumpkin Chocolate Chip Blender Muffins
Who doesn’t love a good muffin, especially when it’s warm? This one packs moisture and flavor with pumpkin, and a sweet surprise with chocolate chips. Bonus: They’re easy to make and oh-so-tasty, too!
Ingredients
- 2 large eggs
- ¼ cup (60 ml) light olive oil
- 1 cup (245 g) pumpkin purée
- ¼ cup (60 ml) skim milk
- ¾ cup (150 g) granulated sugar
- 1¾ cup (220 g) all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground allspice
- ½ teaspoon salt
- ½ cup (120 g) semi-sweet chocolate chips
Directions
- Preheat oven to 350°F (175°C). Lightly coat a muffin pan with cooking spray, or use cupcake liners.
- Place eggs, oil, pumpkin, milk, and sugar into the Vitamix container in the order listed and secure the lid.
- Select Variable 1 and press start. Slowly increase the speed to Variable 5 and blend for 10 seconds. Set aside.
- In a medium mixing bowl, thoroughly mix together the flour, baking soda, cinnamon, allspice, and salt. Stir in chocolate chips.
- Pour the pumpkin mixture into the bowl with the dry ingredients and mix well with a spoon.
- Use an ice cream scoop or a spoon to portion the batter into the muffin cups. Bake for 20 to 25 minutes.
- Cool on a wire rack for 5 minutes.

Pumpkin Muffins on a Pumkinless Island
I usually use my mixer when making my pumpkin muffins, but I decided to try the blender with a few teaks to the recipe. I change the oil to melted butter and the amount of spices & vanilla, but otherwise, this here is a great recipe!

Simple and tasty
This recipe was easy to make and turned out great. Would not say they are the best pumpkin muffins ever, but they were good enough and also weren't overly sweet.

Super easy.
This recipe is so easy and my go to for these muffins. The only change I made was to add raisins instead of chocolate chips, but one day I may just use chocolate chips to try. I definitely would recommend this recipe.

Tasty but heavy
Very easy to assemble but since the oil, sugar and eggs are not creamed they’re a bit dense. But very tasty. I soaked some raisins in cognac and hot water for ten minutes too. I suggest that you use milk instead of water.

Sorry but these are not worth making. They are very dense and hard. Also, sadly, not tasty.
