Southwest Black Bean Dip
This is a quick and easy party favorite, bursting with flavor. Serve with your favorite tortilla chips, crostini, or crudité vegetables.
Ingredients
- ½ cup (120 ml) water
- 1 lime, peeled
- 4 small garlic cloves, peeled
- ¼ cup (5 g) fresh cilantro leaves
- 2 cans (850 g) black beans, drained, rinsed
- 2 teaspoons ground cumin
- 1 teaspoon chili powder
- 2 pinches salt, optional
- 2 pinches ground black pepper
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed.
- Blend for 30 to 40 seconds, use the tamper to press ingredients toward the blades.
- Garnish with chopped cilantro and serve with tortilla chips or fresh vegetables.
Chef's Notes
For a more textured dip, increase speed to Variable 7 or pulse ingredients together.

Watch the salt...
I put the recipe together exactly as listed. I like salt, but this turned out way too salty. So consider where all the salt comes from: does the cans of beans have salt? Probably does. Will your chips have salt? Probably will. Is that 1teaspoon of salt salty? Probably is . Result? You guessed it - I had to do it again!

Bitter taste
It blended beautifully, but I think the white part of the lime made it bitter. Maybe it should be lime juice only?

Love it! Easy and delicious!
I rinsed organic low sodium black beans to remove sodium, used 1 large clove garlic and 1 small clove garlic, relaxed a tad on the water due to the beans not drained precisely, followed the recipe but added two small slices of onion chopped and an extra 1/4 Taco seasoning. Served with spicy quacamole tortilla chips. The texture was perfect. Very delicious with a little kick.

Will definitely make again!!
Great recipe. I listened to other reviewers and trimmed my lime with a sharp knife so there was no white off of the lime going into the recipe. I added an extra clove of garlic, couldn’t help it! Dip blended up beautifully and I garnished with red onion and fresh avocado!! Give it a try!!

Bitter, disgusting, waste of money!
This dip is so bitter from the lime, that it is absolutely disgusting! It cost me about $5 in ingredients I had to throw away, because no one in my family would eat it. I tried to save it by adding extra beans, some salsa, etc., but there was no helping it. This recipe needs a warning label!
