Watermelon Aqua Fresca
This refreshing summertime drink features watermelon and lemon. Simple variations can be made using other citrus and fresh herbs to make this drink even that much more unique!
Ingredients
- 4 cups (600 g) watermelon, chopped
- 1 lemon, or lime, ends trimmed and discarded, remainder cut into 4 equal slices (between 1/4 and 1/2 inch thick)
- 2 cups (260 g) ice cubes, plus additional as needed for serving
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 1 minute, using the tamper to press the ingredients toward the blades.
- Serve over extra ice if desired.
Notes
Both lemons and limes work equally well in this recipe. Just be sure to use the tamper to get things started. Using the Aer Disc container muddles the ingredients to get a refreshing summertime drink.

Modified and better than expected
Using some already frozen coconut meat, I added a few pieces of that, with two full slices of lemon, and fresh mint form the garden, plus a squirt of sunnydew liquid stevia, then topped off with a few cubes of ice and it turned out better than I hoped.

A refreshing summer drink!
It was a big hit with lime and a sprig of mint. Added a little organic sugar to offset the tartness of lime. Delicious!

Loved this drink
This recipe is amazing and easy to do, love it done in the AER, first experiment using the AER and I'm sold on it. Made the most cooling drink with no sugar added on a hot summer day or actually anytime.

With some amendments
I don't use the Aer disc, but I do sneak some veggies in. I scale it down for my 20 ounce container, do half a lemon, half a lime, and add 42 grams frozen carrots and 42 grams frozen yellow/summer squash and about 5 grams of psyllium fiber. A great way to sneak stuff in.
