Almond Leek Soup
Blending the subtle, sweet flavors of almonds, leeks and celery, this soup makes a delightful first course.
Ingredients
- 6 cups (1.4 l) Vegetable Stock
- 1 cup (145 g) almonds
- 1 Tablespoon olive oil, optional
- 6 (230 g) celery
- 1 (160 g) leeks, washed
- salt and pepper, to taste
Directions
- Simmer almonds in stock until soft, about 30 minutes.
- Sauté leeks and celery in oil until soft, about 5 minutes.
- Add sautéed vegetables to almonds and stock. Simmer for about 15 minutes, then allow to cool for 15 to 20 minutes.
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 2 minutes or until smooth.
Notes
Almonds give this soup a smooth, creamy texture that is obtainable without using any cream or dairy products. Leeks grow underground, so be sure to wash thoroughly, preferably after slicing, to clean off any dirt or sediment.

Tastes G-R-E-A-T!!!!!!
I made this soup exactly as written. While making it, I truly had my doubts about how good it was going to be. To my surprise, of all the soups that I have tried from Vitamix, THIS ONE IS THE BEST. Delicious creamy taste...Try it, you will like it.

It is sooo good!
This soup is so good! I didn't have any vegetable bouillon, so I used "Better Than Bouillon - No Chicken Base" instead. It was so good! Next time, I think that I will leave some of the solid pieces out of the Vitamix and then add them in at the end on very low speed to chop them up, to give the soup a chunkier consistency.

I made this soup today not knowing how it would turn out. It's as creamy as if it had a dairy base with an excellent flavor from the celery and leeks.

Easy and delicious!
Just got a Vitamix as a gift and wanted to make soup for dinner with friends. Everyone loved it and since I’m lactose intolerant, the almonds are just a perfect substitute for dairy, soup had amazing creamy texture! Will definitely do it again!

Very good base
I added nutritional flakes and then some tomato sauce (because I was eating it with leftover pasta). I live the texture and how versatile it is. Really mild blend of the flavors.
