Balsamic Citrus Dressing
This light dressing is delicious on greens tossed with mandarin oranges and Chinese noodles, or as a chicken marinade.
Ingredients
- ¼ cup (60 ml) white balsamic vinegar
- 3 (390 g) medium oranges, peeled, halved
- 3 green onions
- 2 garlic cloves, peeled
- 2 Tablespoons granulated sugar
- 2 Tablespoons lime juice
- ⅛ teaspoon white pepper
- 1 teaspoon (3 g) salt, optional
- ½ cup (120 ml) olive oil
Directions
- Place vinegar, oranges, onion, garlic, sugar, lime juice, pepper and salt into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 30 seconds or until smooth.
- Reduce speed to Variable 4 and remove lid plug.
- Pour oil in a thin stream through the lid plug opening until thoroughly emulsified.
Notes
Refrigerate in airtight container. Bring to room temperature and shake before serving over salad. Use agave nectar in place of sugar for a raw diet. You can use balsamic vinegar, but the color will be darker.

Wonderful salad dressing
Love this dressing. I used 3 large oranges, white balsamic vinegar, omitted the pepper and decreased to salt to 1/4 teaspoon. I also added the zest of one of the oranges. It has a very fresh orange taste.

I love this dressing on Bibb lettuce salad with mandarin oranges and toasted almond slivers. The blender made it so easy and fast!

Awesome Citrus Dressing
I made half of this recipe (but used two oranges) and it turned out awesome. Next time, I would probably cut the olive oil back by a tbs or two, but the fresh oranges made this recipe. It also thickened in the fridge. Will be making this again!!!

Wonderful
We really liked this one. Made it in my new Stainless Steel 48oz. container. I had the regular dark balsamic instead of the white and it turned it a little dark as shown in my photo. It was nice and thick and tasted wonderful.
