Basil Walnut Pesto
Blended in a single minute, this creamy pesto recipe yields enough sauce to coat a pound of pasta for an easy dinner fresh from the herb garden.
Ingredients
- ¾ cup (180 ml) extra virgin olive oil
- ¾ cup (75 g) grated Parmesan cheese
- 6 (15 g) garlic clove, peeled
- 6 cups (240 g) fresh basil leaves
- ¾ cup (90 g) walnuts
- ¼ lemon, peeled
- 1 teaspoon salt, optional
Directions
- Place all ingredients into the Vitamix container in order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to Variable 7.
- Blend for 30 to 45 seconds, using the tamper to press ingredients toward the blades.

Maybe if you have old style container
In new style shorter 64 oz container the volume is too small. The pesto just sticks to side and the pusher can't clear it. It doesn't blend well at all. Smells great, but can't use it.

Container Mixup
I decided to make this because my friend grows lots of basil. Like others, I accidentally tried this recipe with the 64-oz low-profile container. It was not as good as it would have been if I would have used a mortar and pestle. The stuff stuck to the bottom under the blades and too the sides. Even though this happened, when I got it out of the mixer, I just chopped at it in the bowl with my silicone spatula. It got better that way. Between three adults, the entire pound of pasta was gone within 8 hours. That's pretty good. I forgot to take a picture. The basil wasn't as processed as I would have liked, but it was still beautiful. I used Radiatore pasta so that it would absorb all that delicious pesto. Great recipe.

Easy peasy
I made this as a half recipe and used pecans instead of walnuts. DELICIOUS! I did add a touch more EVOO and parmigiano. Great way to use basil from the garden and perfect with fresh Meyer lemon juice from the yard. Worked fine in the new style blender container.

Disappointing performance from Vitamix
The recipe was fine, but the container was wrong. I have a Series 7500 Vitamix. I bought it because it was better and easier to use than a juicer. However, I have always been disappointed when I try any recipe that is small in volume. Food is trapped under the blades. In this instance, I had to remove the walnut pesto and transfer it to my Cuisinart. Marion in Morrisville PA

Doesn't blend at all ...
As a previous poster noted, the quantity in your recipe just goes to the sides, and it doesn't work. Someone should have tried the recipes before putting on the Vitamix site! Now, someone should remove the recipes that don't work anymore, and replace with some way that does work (if this is even the correct machine to make pesto, which I now highly doubt!).

Tasty but volume too small for 64 oz container
As another review said, the ingredients were thrown to the side. I followed the recipe exactly, including the sequence of adding the ingredients. Has to remove it and blend in a mini food processor. Tastes good but now I have two machines to clean. Wish I read the reviews first.

Tasty!
This recipe was very good! A little salty so I will use less salt than the recipe calls for next time but otherwise I was very pleased!
