Chestnut Ice Cream
Roasted chestnuts evoke feelings of the holiday season, and this ice cream is a cool twist on traditional flavors.
- 1 1/2 cups (200 g) chestnuts, roasted
- 1½ cup (360 ml) plain dairy free yogurt, or low fat vanilla yogurt
- 15 (105 g) dates, pitted
- 6 cups (780 g) ice cubes
- Place chestnuts, yogurt and dates into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed, using the tamper to press ingredients toward the blades.
- Blend for 30 seconds creating a very smooth base. Stop machine.
- Add ice and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed, using the tamper to press ingredients toward the blades. Blend for 20 seconds.
- Serve immediately

Rated 5 out of 5 by Hicksie_dust from Delicious and so easy! I had a packet of chestnuts left over from last christmas so decided to test this recipe out. I added a tablespoon of dark rum and it was delicious. Really quick and easy to make, I'll certainly be making this over christmas.

Rated 4 out of 5 by f9717 from Frozen yogurt I tried this with chestnuts I had left over from christmas and WOW I loved it. It does come out more like a frozen yogurt treat rather than ice cream. I also tried to freeze it and keep it for longer but it froze into a solid chunk instead of ice cream. Other than that it was so good and a nice way to use up those chestnuts, I would for sure make it again.
