Coconut Milk
With just two ingredients, you can have coconut milk for soups, smoothies, and baking.
Ingredients
- 4 cups (960 ml) water
- 2 cups (150 g) unsweetened shredded coconut
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed.
- Blend for 1 minute or until desired consistency is reached.
Notes
Store in an airtight container in the refrigerator and use throughout the week. Shake well before using. Double this recipe if more milk is needed for the week. Unstrained milk can be used in cooking and baking, but for smooth sauces or drinking, strained coconut milk should be used.

Boiling water?
I've been making coconut milk and found online that everyone heats the water first to soak the flakes, or chips. That made sense so I've been doing it but letting it cool first as it seemed too hot to put in the plastic container of my Vitamix. However, I still burned my hands squeezing the nut bag.
I just read a question on a blog that echoes my thoughts....has anyone tried using room temp water? And your instructions don't mention heating the water, or soaking the flakes. Do you just dump the water and flakes in and start the Vitamix? That would surely simplify matters! I will surely try that today.
One other thing...the first time I made coconut milk I ran the machine a couple of minutes. Later, in the fridge, the water and flakes separated. Next time I ran it a full three minutes and it didn't separate. Thanks for your info.

Love the Vitamix- don't know why I waited so long
I bought this on sale at Costco. Love, love, love it. Making smoothies every morning, have stopped buying commercial almond and coconut milk. Tried cashew milk- yum. The machine is amazing. It really goes well with the desire to eat clean and healthy and whole grains. Love the juice capabilities and the kids love the milkshakes. Smoothies are a great way for kids to get nutrition and disguise it!

This is the right recipe. Some call for 1 c coconut to 4c water - it's far too watery for our taste. This is creamy and twice the health benefits.

Great idea. I am now addicted to coconut.
This recipe is a great example of how simple it is to make an amazingly tasty result with the vitamix. No need to ever purchase coco milk again as it is easier to make my own, and I know the ingredients that went in it!

Fresh Coconut is Best!
I broke into a fresh coconut and made this in the 5600 model. Works great per the instructions!!! Strained a few times and wallah! Delicious, TRULY FRESH coconut milk. I love my Vitamix!

Makes great drinks!
I used unsweetened coconut with this recipe and it makes great coconut milk. Just the right consistency. I used it to make a mocha. I also use real unsweetened cocoa and added honey for sweetener. All heathy ingredients. Thank you for this recipe!
