Emerald Smoothie
Pineapple and vanilla yogurt give this green smoothie a light, citrus flavor that will keep you coming back for more.
Ingredients
- ½ cup (115 g) low fat vanilla yogurt
- 3 slices (310 g) pineapple, peeled
- 1 stalk (40 g) celery stalk
- 2 cups (60 g) fresh spinach
- 2 cups (260 g) ice cubes
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed and then quickly increase to its highest speed.
- Blend for 1 minute or until desired consistency is reached, using the tamper to push ingredients toward the blades.

Fresh and tasty
I make this a couple of times a week on half the scale. Before this, I was not a "celery person" but I now regularly have celery on my shopping list. It's fresh, delicious, and very filling. I typically find that I'm less ravenous even hours after having the smoothie.

Refreshing
I made a half recipe and it filled a normal size drinking glass. The celery has a distinct flavor and very nice addition to the flavor. It's low in calories and I will make again for a mid afternoon treat.

It's a good start
I altered the recipe because the pineapple made it too sweet and there wasn't enough protein. Instead, I did:
1/4 Cup Yogurt
1/4 Cup Cottage Cheese
1/2 Cup Pineapple
1/2 Cup Green Grapes
It's more balanced now.

Really Liked it
My husband & I tried this recipe as our first smoothie. It has a fresh taste & smell. The celery & pineapple are well balanced. The yogurt doesn't make the smoothie have a chalky taste either.

Needed Yogurt Powder
I added yogurt powder because I am Ketogenic...& Smoothie tasted great without chalky taste which u get from store bought yogurt

Modified Pineapple Qty with Stevia
2 cups of pineapple chunks has 44 g of carbs, or 22 g per cup. I reduced recipe to 1 cup and added 2 packages of SweetLeaf Natural Stevia. The result was I enjoyed it. Next time I am going to try this with a splash of Cayenne pepper and/or cinnamon.

Great Taste!
This was my first attempt at a smoothie in my Vitamix and didn't disappoint! I didn't have quite enough pineapple so added a few green grapes. The celery gives it a unique taste. Will definitely be making this one again!

Super tasty
Nice blend of citrus and healthy spinach. Great for kids who don’t like the taste of the greens. I used crushed pineapple which I had on hand vs fresh. It did clog up the blades initially. Seemed to make far more than three cups. Don’t recommend using an oat milk yogurt as it left an odd after taste. Will definitely make this again.
