Works with adjustmentsI adjusted the recipe a bit. I try not to adjust and rate recipes but want to let everyone know that you can puree ginger root using the Vitamix. I left all the skins on, and added a bit of water/ice to help with pureeing. I added 50% in water to my recipe. 400 grams of ginger + 200 grams of water/ice (about 4:1 ratio, I added the ice to keep it cold while pureeing). Using enough ginger root is critical to getting this to puree. I froze the puree and will vacuum seal them after they freeze. When I use the ginger root in the recipe I will add 1.5 times the amount needed to account for the water. 1 tbsp = 1.5 tbsp. Hope this helps anyone who has the idea to

Will be useful in smoothies and recipesI used 3/4 cup ginger in the 32 oz. pitcher. The ginger got chopped, but did not form a paste because it got stuck under the blades and against the sides of the pitcher. I did not want to add liquid to form a paste, so I froze 1 tsp.spoonfuls of the chopped ginger in ice cube trays. It will save a lot of time when preparing smoothies and recipes.

Just didn’t work :(I soo wanted this recipe to work, but it just didn’t. Instead of a smooth purée, the ginger was all stringy and fibrous. I think I’ll have to stick to using a micro plane instead.
