Hummus
Our version of this Middle-Eastern dip contains chickpeas, garlic, and raw sesame seeds. It's traditionally served with flatbread, but crackers and tortilla chips are great, too.
Ingredients
- 2 cans (900 g) chickpeas, liquid reserved from 1 can
- ¼ cup (35 g) sesame seeds
- 1 Tablespoon olive oil
- ¼ cup (60 ml) fresh lemon juice
- 1 garlic clove
- 1 teaspoon ground cumin
- ½ teaspoon salt, optional
Directions
- Place chick peas,reserved liquid, sesame seeds, olive oil, fresh lemon juice, garlic, and cumin into the Vitamix container in the order listed and secure lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend 1 minute, using the tamper to press ingredients toward the blades. Season to taste with salt if desired.

Tasty and easy!
This recipe is basic and yet very tasty. It was easy to put together and the Vitamix yields a very smooth hummus. I used cumin seeds that I had ground using a mortar and pestle and was a little concerned that there might be bits of the seeds in the hummus. But the Vitamix mixed everything together well--no sign of the sesame or cumin hulls. Definitely be ready to use the tamper to help with the mixing. I used roasted sesame seeds (it's what I had on hand) and really enjoyed the taste of the hummus. Looking forward to making this in the future and adding other flavors (green chile, avocados, roasted red peppers, etc.)

Very good recipe to start from...expect to make
changes to suit your tastes.
I made the recipe as instructed the first time, and overall it was good. I thought it was slightly thick and in an effort to make the recipe more convenient, for my second batch I just dumped the two cans of chickpeas into the Vitamix. This turned out too watery. In the 2nd batch I also zested the entire lemon used to supply the juice. Didn't taste it much after I made it, but after sitting 24 hours in the fridge, there was a strong lemon flavor. I'm fine with it, but if you don't like lemon, I wouldn't recommend it. I also tried toasting the seasame seeds and garlic before using it....I was hoping for a smokey flavor, and didn't get much of that. I then came to this website to write a long unhelpful rambling review.

Good, but basic
The recipe is very basic. I think most people will change this up to their taste as I did, but it's a good recipe to get you going.I added an avocado which gives it a nice flavor. Like a few others mentioned, my Vitamix wasn't mixing the ingredients up very well. It starts out ok, but then as I turn the the speed faster it rumbles, then it comes to what seems like its not mixing at all. Wasn't even sure the blades were turning except for the sound of the motor, but they were turning. The tamper definitely needs to be used constantly. I'd like to see that vortex whirlpool look, but I guess you don't get that with the chickpea/liquid consistency for some reason no matter what speed I set it at. It works though.

So easy and delicious!
I've made this so many times that I don't even need to look up the recipe! The only modification that I make is omitting the oil and garlic and adding 12oz of marinated roasted red peppers with oil and garlic. It becomes a beautiful roasted red pepper hummus. My family and my friends love it.

Iffy at first, but turned out great!
I was nervous at first because my machine was making a chugging noise and not blending well. Per the previous comments, I used the tamper a lot and it came out very smooth. It definitely needs salt, so make sure to add it. It took me less than 2 minutes to whip up!

This Hummus recipe is so simple, fresh, lemony and amazing!
I will never prefer hummus other than with my New 3500 vitamix. OMG, it's so good.
Smooth and creamy. I used Himilayan salt with mine. I did not have cumin. I used a little of adobo. I'm single. Therefore, I only used one can of chickpeas. This portion will look like one of those store brought Sabra size. I definitly did not need two cans. This amount could be shared with 2-3 friends. Overall, the end product was perfect. I added hummus to my lentil tortillia tacos. I also warmed a tortillia slowly so that it would be crispy on front and back. It was like a light cracker. I smoothed the hummus over it. So Divine. I have plenty left over to store for snacking with celery and more lentil tacos. Yay!! :-) I'm happy. Keep in mind that this hummus will not be thick like the store brought. It will be way Better! Smooth & Creamy. No perservatives. Yay!!! :-) lol Just saying. Ciao.

Easy and Delicious
Easy and tasty recipe! I opted out of the garlic. I did add a small package of pine nuts which I toasted in the oven for a few mins prior. And as Janet above did, I also used the toasted sesame seeds. These additions made for a delicious treat. Love my new Vitamix!
