Jalapeño Garlic Vinaigrette

Add a little heat to a cool salad with this spicy dressing.

Ingredients

  • ¼ cup (60 ml) apple cider vinegar
  • 5 garlic cloves, peeled
  • 1 Tablespoon pickled jalapeño peppers, in juice
  • 1 Tablespoon Dijon mustard
  • ¼ teaspoon salt
  • ¼ teaspoon hot sauce
  • ¼ teaspoon Worcestershire sauce
  • 1 teaspoon granulated sugar
  • 1 shallot, peeled (about 80g)
  • ½ cup (120 ml) olive oil

Directions

  1. Place vinegar, garlic, jalapeños with juice, mustard, salt, hot sauce, Worcestershire sauce, sugar and shallot into the Vitamix container in the order listed and secure lid.
  2. Blend an additional 10 seconds.
  3. Select Variable 1.
  4. Turn machine on and slowly increase speed to Variable 10, then to High.
  5. Blend for 15 seconds or until ingredients are well blended, using the tamper to press the ingredients into the blades.
  6. Stop and scrape sides. Secure lid.
  7. Select Variable 1.
  8. Turn machine on and slowly increase speed to Variable 4.
  9. Remove lid plug and slowly add oil in a thin stream through the lid plug opening.
  10. Replace lid plug and slowly increase speed to Variable 10, then to High.
