Olive Tapenade
Use as a dip for bread to complement a cheese tray.
Ingredients
- 4 Tablespoons (60 ml) olive oil, optional
- 2 Tablespoons fresh lemon juice
- ΒΌ cup (45 g) capers, drained
- 4 anchovy fillets
- 2 small garlic cloves, peeled
- 6 fresh basil leaves
- 1 pound (455 g) mixed olives, pitted
Directions
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn the machine on and slowly increase speed to Variable 5.
- Blend for 30 to 35 seconds, using the tamper to press the ingredients into the blades.
