Olive Tapenade

Use as a dip for bread to complement a cheese tray.


  • 4 Tablespoons (60 ml) olive oil, optional
  • 2 Tablespoons fresh lemon juice
  • ΒΌ cup (45 g) capers, drained
  • 4 anchovy fillets
  • 2 small garlic cloves, peeled
  • 6 fresh basil leaves
  • 1 pound (455 g) mixed olives, pitted


  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn the machine on and slowly increase speed to Variable 5.
  4. Blend for 30 to 35 seconds, using the tamper to press the ingredients into the blades.
