Peanut Cashew Butter
A mixed nut butter of peanuts and cashews that adds a unique flavor to sandwiches, sauces, and fondues.
- 2 cups (290 g) roasted peanuts
- 2 cups (275 g) roasted cashews
- Pour nuts into the Vitamix container and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed.
- Blend for 45 seconds to 1 minute, using the tamper to press ingredients toward the blades.
- In about 1 minute you will hear a high-pitched chugging sound. Once the butter begins to flow freely through the blades, the motor sound will change from a high pitch to a low laboring sound. Stop machine. Store in an airtight container in the refrigerator for maximum shelf life.

It's so much healthier than the nut butters at the grocery store - and cheaper too! Sometimes I play up the flavor by adding a little unrefined sweetener like maple sugar or coconut sugar or some spice such as cinnamon, cardamom, or even chili powder for a savory treat. I always refrigerate mine in a glass jar once it cools down from the blender, and it keeps great in the fridge.

Rated 4 out of 5 by Katwyn from Very Good, But... I like the cashew-peanut butter, but I LOVE cashew-macadamia nut butter: 1 cup roasted macadamia nuts and 5 cups cashews. I use my Vitamix more often for cashew-macadamia butter than for anything else, since Trader Joe's stopped selling it--but I now buy the roasted unsalted cashews and macadamia nuts from Trader Joe's to make it myself. It's so smooth and creamy without any additives due to the high oil content of the nuts and is so delicious it doesn't need salt. I keep it in the refrigerator to keep the oil from separating and rising to the top (sometimes chilling it in the freezer for a couple of hours to firm it up quickly) and most often enjoy it straight from the jar on a spoon along with a cup of fresh, hot coffee. It is truly my favorite snack, treat, and sometimes serves wonderfully as a quicky breakfast replacement, too. I freely admit to being addicted to the stuff! It's also good in smoothies, on toasted homemade bread, and I use it in cooking, as well.

Rated 5 out of 5 by Renut from Smooth & Healthy Peanut Butter! I made the Peanut & Cashew Butter using bulk nuts from a co-op (raw cashews and dry-roasted peanuts, unsalted). Follow the Vitamix recipe for amounts: 1 1/2 cups each) Clean nuts separately in a colander with cool water to remove dust/debris. Rub dry in towel and place in separate cookie sheets to bake at 300-350 degrees for 5 mins, stir, then continue baking until nuts turn golden and release the nut smells. The nuts cook at different times because of the size difference. Remove from oven before over-browning (nuts continue to cook while cooling on cookie sheet). Place nuts in Vitamix, add 1/4 tsp sea salt and 1 - 3 Tblsp of honey or Agave-in-the-Raw to sweeten, if desired. Follow Vitamix instructions, until nut butter is smooth. Place in a container with a lid. No need to refrigerate if eaten within three weeks. Naturally sweet and good for many Paleo recipes requiring a nut butter. My family likes this nut butter so much, they have switched from Jiff to this Vitamix nut butter.

Rated 5 out of 5 by arnette from Greatest peanut butter When Vitamix did demos in Costco that allowed the making of peanut butter, I got hooked into buying one. I never liked the jarred peanut butter so I was sold! After making peanut butter, I make a Chocolate Peanut Butter Smoothie with the remnants in the container. I add 2 or 3 packets of hot cocoa mix, some liquid (milk or juice), fruits if available, and ice. Yum. You get two for one!

It rarely makes it to the toast....he just eats it with a spoon. After reading some of these reviews....I can't wait to try different nut combinations
