Red Pepper Crab Soup
A restaurant-quality soup prepared in just minutes.
Ingredients
- ¼ cup (40 g) onion, chopped
- 1 Tablespoon olive oil, optional
- 1 cup (240 ml) chicken broth
- 1 cup (240 ml) half & half, with 1 Tablespoon all-purpose flour
- 3 red bell peppers, roasted
- 2 pounds (900 g) crab meat, cooked
- 1 Tablespoon lemon juice
- 1 pinch cayenne pepper
- ¼ teaspoon salt, optional
Directions
- Sauté onions in olive oil.
- Place sautéed onion, broth, half and half with flour, red peppers, lemon juice, and cayenne pepper into Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 6 minutes or until heavy steam escapes from the vented lid. Add salt.
- Reduce speed to Variable 2 and remove the lid plug. Drop crab meat through the lid plug opening. Stop machine and serve immediately.
Notes
For a non-dairy alternative, substitute soy milk for low fat or skim milk.

Amazing with a few tweaks
I just received my Vitamix today and wanted to try a savory soup first. I tweaked this recipe by adding garlic and white wine while sauteed the onions. When adding the crab, I also added some homemade roasted red bell peppers to add some texture to the soup. To finish it at serving time, I added Lawry's course garlic salt with parsley and some fresh cracked white pepper to season and sprinkled some parmesan on top....absolutely amazing!!!!!

Unfortunately I missed the "roasted" red peppers. I used raw and this made it less flavorful. It would be nice if it said in the instructions to roast the red peppers. Just like it said to sautee the onions. Overall great though.

Not good.
Didn't care for this at all. It's hard to make anything with crab not good, but the soup was sort of sweet, just not very good.
