Sweet Potato Pie
Served with dinner or as a dessert, this pie boasts a medley of holiday flavors such as cinnamon, ginger, and cloves.
Ingredients
- 3 cups (720 ml) low fat evaporated milk
- 1 cup (240 ml) egg substitute
- ½ cup (120 ml) honey
- 3½ cup (1.1 kg) sweet potatoes, cooked, mashed
- 1 teaspoon (3 g) salt, optional
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- ½ teaspoon ground cloves
- 3 whole wheat pie shells, unbaked
Directions
- Heat the oven to 425°F (220°C).
- Place milk, egg substitute, honey, sweet potatoes, salt, ground cinnamon, ginger, and cloves into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 4 or 5.
- Blend for 15 to 20 seconds or until smooth.
- Pour into three 9-inch (23 cm) unbaked pie shells.
- Bake for 15 minutes.
- Reduce oven temperature to 350°F (180°C). Bake for 40 minutes.
- Filling will be soft but firms up as it sets and cools. Chill and serve.

Add pickled ginger for a kick!
This recipe is simple and just needs a bit more to send it over the top. That’s why I added pickled ginger to the blend. Also, I used maple syrup instead of honey. I used honey to candy some pecans to garnish on the top XD

Honestly, not my favorite but I came in with a strong bias. I am sure that folks that like sweet potatoes would have a different opinion.

It really tastes like pumpkin pie. Let everyone assume it was pumpkin and they all ate every bit. I was left with the air dish. Yummy. I will make it for Thanksgiving Day.
