Vegan Truffles

With just a few simple ingredients, these guilt-free vegan truffles are the perfect addition to any dessert spread.


  • ⅓ cup (80 ml) soy milk, or milk
  • 1 cup (140 g) raw almonds
  • ¾ cup (130 g) dates, pitted
  • 2 Tablespoons (30 ml) agave nectar, optional
  • 1 Tablespoon (5 g) cocoa powder
  • ¼ cup (40 g) Coco Wheats


  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 1 minute, using the tamper to press the ingredients into the blades. Consistency should be thick like dough. If too thick, adjust by adding more milk.
  5. Chill for about 30 minutes to 1 hour, then Form into 1-inch (2.5 cm) balls and freeze.
