Cappuccino
This coffee drink uses the aeration container to create that unique milk foam that cappuccinos and machiattos are well known for.
Ingredients
- 1 cup (240 ml) warm skim milk, approximately 160°F [70°C]
- 6 ounces (180 ml) espresso, brewed hot
- sweetener, if desired
Directions
- Place warmed milk into the Vitamix container and secure the lid. Select the lowest setting. Start the machine, slowly increase to Variable 6, and blend for 45 seconds.
- Stop the machine and remove the lid.
- Portion 1 cup (240 ml) milk foam into each cup and top with 3 ounces (90 ml) espresso.
- Sweeten if desired.
Chef's Notes
Important: This recipe only works with skim milk. Also, it's best to heat the milk in a microwave or on the stovetop to a slow simmer (around 160°F [70°C]). When done aerating, the volume will double. If only making a half recipe for a single serving, reduce blending time to 30 seconds.

I have found you can use 1 percent milk and it works. I have Vitamix 6300 I start on speed one and slowly increase to the most speed 5. I watch to make sure it is not over churning and only forms the 4 clover. Its will slow down and that is when I stop the machine. Perfect forth. I only use 1 percent milk and to have to buy no fat milk just for my coffee I find to be a big waste. I figured there has to be able a way to use other types of milk.

Easy Cappuccino
This worked especially well. I made instant expresso and added a bit more than the amount specified to the hot milk in the cup to make it stronger. The foamy head on top was impressive. Who needs a dedicated cappuccino maker when you have the Aer disc container.

Home run with Vitamix almond milk recipe
I made almond milk (recipe on this site) with my Vitamix last night adding a touch of vanilla and honey; strained in a fine mesh sieve with some cheesecloth. I just attempted my first almond milk cappuccino with a shot of locally roasted coffee and dusted it with Dagoba Xocoatl hot chocolate. Knocked it out of the park--it is incredible!
