Kale And Basil Pesto
This vibrant blend of kale and basil is perfect on any pasta.
Ingredients
- 1 cup (240 ml) extra virgin olive oil
- 1 cup (120 g) soy parmesan [or parmesan cheese]
- 3 garlic cloves, peeled
- 2 cups (80 g) fresh basil leaves
- 2 cups (120 g) kale
- 3 Tablespoons (25 g) pine nuts
- ΒΌ teaspoon kosher salt, optional
- 1 pinch ground black pepper
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to variable 5, using the tamper to press ingredients toward the blades. Blend for 20 to 30 seconds or until desired consistency is reached. For a smooth pesto blend on its highest speed.
