Kale and Basil Pesto
This vibrant blend of kale and basil is perfect on any pasta.
- 1 cup (240 ml) extra virgin olive oil
- 1 cup (120 g) soy parmesan, or parmesan cheese
- 3 medium garlic cloves, peeled
- 2 cups (80 g) fresh basil leaves
- 2 cups (120 g) kale
- 3 Tablespoons (25 g) pine nuts
- ¼ teaspoon kosher salt, optional
- 1 pinch ground black pepper
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to variable 5, using the tamper to press ingredients toward the blades.
- Blend for 20 to 30 seconds or until desired consistency is reached. For a smooth pesto blend on its highest speed.

If basil is not plentiful this is a great alternative and I bet most would not even notice the kale (over just traditional basil). We used almonds when I found no pine nuts in the pantry-Again, did not taste a difference from traditional pesto. Delicious.We added tomatoes and rigatoni.

Since we grow basil in the summertime we have a lot so I don't use the kale. I make extra batches, pour into ice cube trays, freeze & we enjoy it all year long! We also love the pesto on our homemade pizza.

Rated 5 out of 5 by melissasue21 from Love it! We had extra kale and basil in the garden and when searching for recipes I stumbled across this one. Although my garlic was a little strong (next time I will use 2 cloves) the whole family gobbled this up!! Great on pasta and for a crudite dip.
