Savory Oatmeal

A versatile, nutrient-dense breakfast or meal that swaps traditional sweet toppings for savory, umami-rich ingredients, acting as a hearty alternative to rice, risotto, or polenta.

  1. Heat the olive oil in a small saucepan over medium heat. Add the minced shallot and cook until softened and aromatic, 2 - 3 minutes.
  2. Add the oats and grated garlic, stirring to coat in oil. Add the vegetable stock, soy sauce, and salt. Bring to a boil, then reduce to a simmer and cook for 15 - 20 minutes, stirring occasionally. Oats should be thick and creamy. Season with black pepper and more soy sauce or salt to taste.
  3. Remove the pan from heat and portion oats into 2 bowls. Add savory proteins and vegetables as toppings, if desired. Top with sriracha hot sauce and serve immediately.

Notes

Get creative with toppings! Try sautéed vegetables like spinach, mushrooms, and carrots. For protein, try soft boiled eggs and/or pork belly. Garnish with avocado, scallions, or microgreens along with sriracha. Try a drizzle of high-quality sesame oil to finish the dish!
